Biochemical tests are essential for identifying the presence of different types of carbohydrates such as reducing sugars and starch. The two main tests used are the Benedict's Test for sugars and the Iodine Test for starch.
The Benedict's Test is used to detect the presence of reducing sugars. Reducing sugars can donate an electron to Benedict's reagent, a solution containing Copper(II) sulfate, which reacts with the sugar to form copper(I) oxide, producing a colour change.
Preparation: Ensure that the food sample is in liquid form. If the sample is solid, dissolve it in water to create a solution.
Add Sample: Place 2 cmÂł of the food sample in a test tube.
Add Benedict's Reagent: Add 2 cmÂł of Benedict's reagent (an alkaline solution of copper(II) sulfate) to the test tube.
Heat the Sample: Place the test tube in a water bath set to gently heat the mixture for 5 minutes.
Observe the Colour Change:
The Iodine Test is used to detect the presence of starch in a sample.
These biochemical tests are useful in determining the types of carbohydrates present in various food samples.
