Dry Heat: When dry heat is applied to starch, it causes the starch grains to burst and absorb fat. This process is known as dextrinisation, leading to the formation of a brown-colored compound.
Moist Heat: On the other hand, moist heat causes starch grains to swell and burst, absorbing moisture and thickening liquids. This is referred to as gelatinisation.
