Methods of Heat Transfer

  1. Conduction
  • Heat travels from one molecule to another through a solid object.
  • Example: Frying food on a pan – heat moves from the ring to the pan, then cooks the food.
  1. Convection
  • When liquids and gases are heated, they rise and cooler liquids or gases replace them, creating convection currents.
  • Example: Baking in an oven – hot air circulates around the food.
  1. Radiation
  • Heat is transferred directly from a source to the surface of the food.
  • Example: Grilling – heat rays from the grill cook the food without needing contact.

  • Many cooking methods combine heat transfer techniques. For example, boiling pasta involves conduction (heating the saucepan) and convection (water heating and cooking the pasta).
